Ingredients

For the Soya Filling:

  • 1 cup Sresth Ora soya chunks
  • 2 tablespoons yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon oil
  • 1 medium onion, thinly sliced
  • 1 medium bell pepper, thinly sliced
  • 1 medium tomato, diced
  • Whole wheat tortillas or rotis
  • Lettuce leaves
  • Cucumber slices
  • Yoghurt sauce or hung curd spread

Instructions:

Prepare the Soya Chunks:

  • In a saucepan, bring 4 cups of water to a boil.
  • Add 1 teaspoon of salt and 1 cup of Sresth Ora Soya Chunks.
  • Boil for 5–6 minutes until the chunks become soft and spongy.
  • Drain the water and rinse the soya chunks under cold water.
  • Squeeze out the excess water from the chunks and set them aside.

Cook the Soya Filling:

  • Heat 1 tablespoon of oil in a pan over medium heat.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  • Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
  • Add the chopped capsicum and cook for 2–3 minutes until slightly tender.
  • Add turmeric powder, cumin powder, coriander powder, red chilli powder, and salt to taste. Mix well.
  • Add the prepared soya chunks to the pan and mix thoroughly to coat them with the masala.
  • Cook for 5–7 minutes, stirring occasionally, until the flavours are well absorbed.
  • Turn off the heat and let the filling cool slightly.- Warm the whole wheat tortillas or rotis on a skillet.
  • Place a lettuce leaf on each tortilla.
  • Add a few cucumber slices over the lettuce.
  • Spread a spoonful of yoghurt sauce or hung curd spread over the vegetables.
  • Place a generous amount of the soya filling on top.
  • Sprinkle chaat masala and a few drops of lemon juice if desired.
  • Roll the tortilla tightly to enclose the filling.
  • Cut the wrap diagonally and serve immediately.
