  • 1 medium Carrot, grated or finely chopped
  • 1/2 cup Green Peas (fresh or frozen)
  • 1-2 Curry Leaves
  • Salt, to taste
  • 2 cups Water
  • Fresh Coriander Leaves, chopped (for garnish)
  • Lemon wedges (for serving)

Optional Ingredients:

  • 1/4 cup Peanuts or Cashews, roasted (for added crunch)
  • A pinch of Turmeric Powder (for colour)
  • Ginger, grated (for added flavour)

Instructions

Step 1: Preparing the Vermicelli

  • Heat the Pan: Heat a pan on medium flame. Add the Vermicelli and roast it until golden brown, stirring frequently to avoid burning. Once done, set aside.

Step 2: Cooking the Vegetables

  • Heat the Oil: In the same pan, heat 2 tablespoons of oil over medium heat.
  • Add Spices: Once the oil is hot, add 1 teaspoon of mustard seeds. When they start to splutter, add 1 teaspoon of urad dal. Sauté until the dal turns golden brown.
  • Sauté Aromatics: Add the finely chopped onion and green chillies to the pan. Sauté until the onion becomes translucent. If using, add ginger and sauté for another minute.
  • Add Vegetables: Incorporate the grated carrot, green peas, and curry leaves. Cook for 3-4 minutes until the vegetables are slightly tender.

Step 3: Cooking the Upma

  • Add Water: Pour in 2 cups of water and add salt to taste. If desired, add a pinch of turmeric powder for colour. Bring the mixture to a boil.
  • Add Vermicelli: Once the water is boiling, gently add the roasted vermicelli to the pan, stirring well to prevent lumps.
  • Cook the Vermicelli: Reduce the heat to low, cover the pan, and let it cook for about 5-7 minutes until the vermicelli absorbs the water and is cooked through. Stir occasionally to ensure even cooking.
  • Fluff and Garnish: Once cooked, remove the lid, fluff the Upma with a fork, and garnish with chopped coriander leaves. If using, sprinkle the roasted peanuts or cashews on top.
