Masala Dosa Recipe with Cold-Pressed Groundnut Oil

Groundnut Oil

One of the famous dishes, Masala Dosa, is loved across all lengths and breadths of India. It is a crispy pancake prepared from a rice and lentil mixture filled with spiced potatoes. It’s one of those extremely popular breakfast dishes everywhere in India. Such a golden crispy dosa has a nice supporting factor: the filling of the dosa- the spiced potato; this forms a very good mix of flavours and textures. It is served with sambar and coconut chutney. This recipe uses Sresth Ora’s Cold-Pressed Groundnut oil, which further enhances the flavour and brings many health benefits.

Ingredients

To prepare Masala Dosa, you’ll need the following ingredients:

For the Dosa Batter:

  • 1 cup rice
  • 1/4 cup split urad dal (black gram)
  • 1/4 tsp fenugreek seeds
  • Water as needed
  • Salt, to taste

For Masala for Potato Filling:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 medium onion, finely chopped
  • 1-2 green chillies, chopped
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp grated ginger
  • 1/4 teaspoon cumin seeds
  • 1/4 tsp garam masala powder
  • Salt to taste
  • Fresh coriander leaves, chopped
  • 1 tbsp Sresth Ora Cold-Pressed Groundnut Oil

Instructions

Step 1: Prepare the dosa batter

  • Rinse the rice, urad dal well, and fenugreek seeds. Soaking them for about 6-8 hours or overnight would also do well.
  • Squeeze out the liquid and grind it into a smooth batter with a little water. The batter will be thick but pourable consistency.
  • Mix well and add salt. Ferment for 8-12 hours, depending on the weather. If it is cold, fermentation will be a little longer.

Step 2: Prepare the Potato Filling (Masala):

  • Heat 1 tablespoon of Sresth Ora Cold-Pressed Groundnut Oil in a pan over medium heat.
  • Add mustard seeds and let it splutter. Then add cumin seeds, green chillies, and grated ginger. Saute for a minute.
  • Add chopped onions and fry until they turn soft and golden brown.
  • Add the turmeric powder, garam masala, and salt. Stir in the mashed boiled potatoes.
  • Stir-fry for 5 to 7 minutes until all the spice coats the potatoes.
  • Garnish the top with chopped fresh coriander leaves. Set aside the masala filling.

Step 3: Cooking the Masala Dosa

  • Heat a non-stick griddle or tawa over medium heat. Once hot, grease lightly with a little Sresth Ora Cold-Pressed Groundnut Oil.
  • Pour a ladleful of dosa batter onto the hot griddle; spread it out thinly and into pancake-like circular shapes with a circular motion.
  • Sprinkle a little oil along the edges. Flip and toss the dosa until the bottom is golden brown and crispy.
  • Flip the dosa gently, if desired, or keep it open. Put a generous amount of the prepared potato masala in the centre.
  • Fold the dosa over the filling and serve it hot with coconut chutney and sambar
