Creamy Palak Paneer: A Perfect Indian Comfort Food

Palak Paneer

Palak paneer is one such classic Indian dish, which includes fresh spinach along with soft, cubed pieces of paneer (the Indian cottage cheese) and gobbling up a lot of it along with rich flavours in a spiced gravy. Ingredients

To prepare this Creamy Palak Paneer, you’ll need the following ingredients:

  • 300 grams of fresh spinach (palak)
  • 200 g paneer is cut into small pieces.
  • 2 tbsp Sresth Ora Groundnut Oil
  • 1 large onion; finely, chopped
  • 2, tomato, pureed
  • 1 teaspoon of ginger-garlic paste
  • 1-2 green chillies, finely chopped
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric powder
  • 1 tsp Red chilli powder
  • 1 teaspoon of garam masala
  • 1/2 teaspoon of coriander powder

Salty to taste

  • 1 tsp heavy cream (optional)
  • 1/2 tsp of kasuri methi or dried fenugreek leaves
  • 1/2 teaspoon of garam masala 
  • 1 tsp of lemon juice

Instructions

Blanch the spinach

  • Begin by rinsing fresh spinach leaves in flowing water to get them dirt-free of particles.
  • Boil water in a pot. Add spinach leaves and cook for 2-3 minutes, or until they wilt.
  • Drain the spinach and plunge it into an ice bath to retain the beautiful green colour.
  • Allow it to stand for a few minutes, then drain off the liquid. 
  • Blend it in a blender or mixer to a puree.

Cook the Paneer:

  • Heat Sresth Ora Groundnut Oil in a pan with medium heat.
  • Add the paneer cubes to the pan and sauté till they are light golden. Remove the same from the pan and keep it aside.

Prepare the Gravy:

  • Add cumin seeds to that pan in oil; let them splutter.
  • Add the minced onions and sauté until they turn golden brown.
  • Add the ginger-garlic paste and the green chillies; sauté for the next 2 minutes till fragrant.
  • Then add the tomato puree and simmer until the oil starts to separate from the masala.

Add the spices:

  • Add turmeric powder, red chilli powder, coriander powder, and salt according to taste and mix it well.
    Fry for 2-3 minutes so that all the spices blend well with the tomato gravy.

Mix Spinach and Gravy:

  • Add this spinach puree to the masala mixture. Mix thoroughly and cook on medium heat for about 5 minutes so that the spinach gets well incorporated with spices. If the gravy is too thick, you can thin it by adding a little water, depending on the consistency you want.

Add paneer and finishing touches:

  • Add the lightly browned paneer cubes to the spinach gravy very lightly. Stir again gently without breaking the cubes. 
  • Add the kasuri methi and garam masala, cooking for another 3-4 minutes.
  • You can also add in some fresh cream if you like it rich in texture and flavour.
  • Pour in some lemon juice over it and, after a last stir, serve

Serve:

  • Garnish with a few fresh coriander leaves. The delicious Palak Paneer can be served hot with roti, naan, or rice.
