Baingan Bharta is one of the most sought-after Indian recipes. It is smoked and charred with an open flame, owing to most of the smoky flavours. Sresth Ora Cold-Pressed Mustard Oil would add that final flair and make it rich, and authentic. Mustard oil gives a characteristic pungent flavour and has many different uses in Indian cuisine, mainly in Eastern and Northern India.
This is a tasty full smoky flavour treat that would go well with roti, paratha or rice. This recipe is healthy because cold-pressed mustard oil has all the natural constituent elements of mustard oil and is hence a good choice that may be used for cooking.
Ingredients
To prepare this Baingan Bharta, you’ll need the following ingredients:
- 2 medium-sized eggplants (baingan)
- 2 tablespoons Sresth Ora Cold-Pressed Mustard Oil
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1 green chilies, chopped. Optional – for some heat.
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
Step 1: Roast the eggplant
The key for Smoky Baingan Bharta will come from roasted eggplant. Take that eggplant, wash it clean, and make a couple of slits in the eggplant. Roast directly above a flame on your stovetop (or, better still, on a grill) over an open flame by turning it occasionally with the tongs to get blackening on all sides. Generally, this would take 10-15 minutes. The skin and interior should be soft and smoky. Once it is done, take off the flame and let it cool down.
Step 2: Baingan Bharta Base
Heat Sresth Ora Cold-Pressed Mustard Oil in a pan when the eggplant has cooled a little. When hot add cumin seeds and let splutter. Add the chopped onion sauté until brownish then add the ginger-garlic paste and the chopped green chilli if using. Sauté for 2 minutes more.
Step 3: Add spices and tomatoes
Now add in the tomatoes, turmeric powder, red chilli powder, garam masala and coriander powder. Cook on medium flame till tomatoes soften up and oil starts leaving the masala.
Step 4. Grind the roasted eggplant
Peel the roasted eggplant. The smoky aroma will already have perfumed your kitchen; the soft interior of the eggplant is crushable. Crush the pulp of the eggplant by using a fork or masher. Do not let it form lumps.
Step 5: Mixing and Cooking
Add the mashed eggplant to the prepared masala. Mix well so that flavours get combined. Continue cooking the mixture on low to medium heat for the next 5-7 minutes, stirring occasionally. Add salt according to your taste and balance the spices to your preference. Continue to cook until the baingan bharta becomes creamy in consistency with a beautiful flavour integration.
Step 6: Plate and Serve
Garnish with fresh coriander leaves. Serve the Smoky Baingan Bharta with roti, paratha, or steamed rice. That smokiness and the richness from Sresth Ora Cold-Pressed Mustard Oil are sure to make this a family favourite!
