Ingredients
For the chicken marinade:
- 500g boneless chicken
- 1 cup plain yoghurt
- 1 tbsp lemon juice
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp Sresth Ora Mustard Oil
For the Masala Sauce:
- 2 tbsp Sresth Ora Mustard Oil
- 2 medium onions (finely chopped)
- 1 tbsp ginger-garlic paste
- 2 large tomatoes (pureed)
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chilli powder (adjust to taste)
- 1/2 tsp garam masala
- Salt to taste
- 1/2 cup fresh cream
- Fresh coriander leaves (for garnish)
Instructions:
Step 1: Marinate the Chicken
Begin by seasoning the chicken. Combine the chicken cubes in a large bowl with yoghurt, lemon juice, ginger-garlic paste, turmeric powder, red chilli powder, garam masala, salt, and mustard oil. Make sure all the pieces get a good coat. Cover and refrigerate the bowl for as little as 1 hour (or preferably overnight) to develop all the flavour you can.
Step 2: Cook the Marinated Chicken
Prepare the grill. Once marinated, heat a nonstick pan or grill pan over medium heat. Add a few drops of Sresth Ora Mustard Oil if required to make the pan greasy. Add the chicken pieces to the hot pan and cook for 6 to 8 minutes, stirring occasionally. You want them to be lightly charred on the outside and completely cooked on the inside. Once they’re ready, take them out of the pan.
Step 3: Make the Masala (Curry)
To make the masala curry, heat 2 tbsp. of 36 Sresth Ora Mustard Oil in a deep pan or kadhai. Add the finely chopped onions, and on medium heat, sauté them until they are golden brown (5 to 7 minutes). Now add the ginger-garlic paste and sauté for a minute until the raw smell goes away.
Step 4: Combine the Chicken with the Masala
Then add the pureed tomatoes and allow them to cook for 7 to 8 minutes. You’ll see the mixture thicken, and then you’ll see the oil separating; that’s the time for the spices. Stir in turmeric, coriander, cumin, red chilli powder, and salt. Stir well and allow the masala to cook for a couple more minutes for the spices to release all their aroma.
Step 5: Final Touch
Next, add all the cooked chicken pieces into the masala and carefully roll them in the sauce. Add the fresh cream and combine everything together. Lower the heat and let the curry simmer for approximately 10 minutes. This will allow the chicken to soak up the rich flavours of the gravy.
Finish with a sprinkle of garam masala and toss one last time. Garnish the dish with freshly chopped coriander leaves and serve piping hot with naan, roti, or a pot of steaming basmati rice
