Ingredients

For the Dabeli Masala:

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon fennel seeds
  • 2-3 dried red chillies
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cardamom powder

For the Filling:

  • 4 medium-sized potatoes, boiled and mashed
  • 1/2 cup roasted peanuts, roughly crushed
  • 1/2 cup pomegranate seeds
  • 1 teaspoon homemade dabeli masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves

For the Chutneys:

  • 3-4 tablespoons sweet tamarind chutney
  • 2 tablespoons green chutney (optional)

For the Pav:

  • 8 pav buns 
  • Butter for toasting

Instructions:

  1. Prepare the Dabeli Masala: Roast the coriander, cumin, fennel seeds, red chillies, peppercorns, and cloves on low heat till it release its aroma. Let the spices cool, then grind to a fine powder. Add the cardamom powder to finish dabeli masala at home. This masala will be the flavour base of your filling.
  2. Make the Potato Filling: In a large bowl, mix mashed potatoes, salt, freshly prepared dabeli masala, crushed peanuts, pomegranate seeds and chopped coriander leaves. Mix everything well so that all components are evenly distributed. It is a savoury, spicy and slightly sweet filling that is the heart of the dabeli.
  3. Prepare the Pav: Slice the pav buns horizontally. Heat a griddle or skillet, and add Sresth Ora Refined Soyabean Oil. Put butter on each half before setting them on the griddle.
